Serves 4 - 6.
Ingredients:
- 380ml milk
- 50ml flour
- 30ml sugar
- 3 eggs
- 2 cups of pitted red cherries
Method:
Combine flour and sugar in a mixing bowl. Separate one egg, beat together the egg yolk with the two whole eggs.
Add to flour mixture.
Gradually beat in milk, mixing until smooth. Cover mixture and leave to stand 10min.
Beat remaining egg white until stiff and fold into mixture.
Spoon cherries into a lightly greased ovenproof dish and pour the batter over.
Bake in a bain-marie for 35min on 180C.
Serve warm or cold, as is or with whipped cream or vanilla ice-cream.
