Simple broccoli soup

Interesting flavours for this quick and easy soup. Make it all year round replacing fresh broccoli with frozen.  Serves 4.



Ingredients:
  • 500g broccoli
  • 500ml water
  • 125ml cream
  • 5ml grated lemon rind
  • 25g butter
  • 1 cube chicken stock
  • 1 small, finely chopped onion
  • 2 cloves of minced garlic
  • 1ml nutmeg
  • 1t black pepper
  • basil and coriander or parsley for serving

Method:

Cook broccoli in chicken stock and water, and then liquidise and return to the pot.
Heat butter in a saucepan and sauté onion and garlic. Add spices.
Add cream to onion & garlic mixture and cook on medium until onions are soft.
Add the onion mixture to broccoli.
Add lemon rind and herbs.
Heat thoroughly, decorate with dried fried onions and a sprig of coriander.
Serve with crusty baguette.
