Nutty choco banana bread

Use over ripe bananas which are much sweeter to make this delicious, healthy loaf. Ring the changes with walnuts, coconut oil and/or coconut sugar. Serves 4-8.

 
Ingredients:
  • 3 bananas (mashed)
  • 1 1/2 cups of flour
  • 2 large eggs (lightly beaten)
  • 1/4 muscovado sugar
  • 1/2 cup oats
  • 1/2 cup oat bran
  • 1/4 cup chopped almonds (grilled)
  • 1/4 cup chocolate chips
  • 80g butter (melted)
  • 1 yoghurt
  • 1 t vanilla powder
  • 1 t spice for "pain d'épices"
  • 1 t cinnamon
  • 1 t baking soda
  • 1 t baking powder

Method:

Preheat the oven to 180°C.
In a large bowl, sift the flour and add the dry ingredients. Mix.  
In another bowl, mix the eggs, mashed bananas, yoghurt and butter until combined. 
Gently fold in the banana mixture into the dry ingredients using a spatula until just combined. Over mixing will make the banana bread rubbery.
Pour into greased a loaf tin and bake for approximately 1 hour or until a skewer comes out clean.
Allow to cool for at least 10 min before turning out on a cooling rack.
