Ingredients:
- 1 & 1/2 cups black & green olives (or only one colour)
- 2T capers
- 3 cloves of garlic
- 3T lemon juice
- 3T olive oil
- Fresh thyme & rosemary according to taste
- Black pepper according to taste
Method:
Put all ingredients in a food processor or blender and mix until smooth adding more lemon juice and/or olive oil if needed.
Serve as an appetiser on melba toast or with fresh baguette
