Tapenade

 Ingredients:

  • 1 & 1/2 cups black & green olives (or only one colour)
  • 2T capers
  • 3 cloves of garlic
  • 3T lemon juice
  • 3T olive oil
  • Fresh thyme & rosemary according to taste
  • Black pepper according to taste

 Method:

Put all ingredients in a food processor or blender and mix until smooth adding more lemon juice and/or olive oil if needed.

Serve as an appetiser on melba toast or with fresh baguette
