Lemon whip

Another recipe from an old South African friend.

Ingredients:
  • 150g sugar
  • 3 eggs separated
  • 1 T gelatine
  • 1 T cold water
  • 2 T boiling water
  • 5 T lemon juice
  • rind of 1 lemon grated

Method:

Soak gelatine until light and creamy.
Add lemon rind and lemon juice.
Dissolve gelatine in boiling water and add to egg mixture. Mix thoroughly.
Whip egg whites until stiff, fold into lemon mixture.
Pour into mould and refrigerate.
