This is a cake recipe from the region of Alsace usually made with stale sweet milk rolls or brioche and black cherries. An Alsatian friend makes it very often and gave me this delicious recipe which is very easy to make. Thank you, Flore ;)

Ingredients:
- 10 "pains au lait" (sweet milk rolls)
- 500 ml boiling hot milk
- 4 eggs, separated
- 1 jar of black cherries soaked overnight or a for at least 2 hours in Kirsch
- 1 apple, cut into small cubes
- 60g raisins
- 100g almond powder
- 60g sugar
- 2 t cinnamon
- 2 t vanilla essence
- Slivered almonds for decoration
Method:
Soak the bread in the hot milk. Leave to cool and then mash with a fork.
Add the sugar, spices, vanilla essence and almond powder. Mix well.
Add the egg yolks; cherries, apple and raisins.
Butter an ovenproof dish and pour in the mixture.
Sprinkle with the slivered almonds and bake in at 180° for about an hour. The cake is ready when a skewer comes out clean.
When cooled, carefully wrap the cake in aluminum foil and refrigerate overnight.
