Scones

My Mom's favourite scone recipe...served with jam and cream, it's a lovely treat for tea!





Ingredients:
  • 2 cups self-raising flour
  • 3/4 cup milk (at room T°)
  • 3 eggs (at room T°)
  • 2 T butter
  • 1T sugar
  • Pinch of salt

Method:

Preheat oven to 220°.
In a large bowl, sift the flour and mix dry ingredients together then rub in the butter to make breadcrumbs.
Beat the eggs and milk together and add to the crumb mixture (keep a little for brushing the scones) to form a stiff dough. Add flour if necessary.
Roll out the dough on a lightly floured surface and cut into rounds.
Brush with egg mixture and bake for 12 to 15 minutes until well risen and golden.
