Veggie Lasagna

 A delicious veggie lasagna with tomatoes, onions, spinach and mushrooms.



Ingredients:
  • Lasagna sheets
  • 3 large onions
  • 2 large tomatoes
  • 500g cooked spinach
  • 100g cooked mushrooms
  • 100g flour
  • 40g butter
  • 300ml whole milk
  • 4T Garlic powder
  • 1T Turmeric
  • 1T Cayenne pepper
  • Black pepper
  • Bread crumbs

Method:

Chop up the onions finely and fry them on medium heat, add the spices. When tender, mix in the cooked spinach and mushrooms. Reduce as desired, but do keep some liquid. Transfer to a bowl and let the mixture cool down.
In a pot make the bechamel: Melt the butter, then slowly add in the flour stirring thoroughly. Progressively add milk and continuously stir the mixture until thick but still fluid.
In a lasagna dish, pour a (1) layer of bechamel, then top it with a (2) layer of lasagna sheets. On top make a (3) layer of the spinach, onion and mushroom mixture, then a (4) layer thinly sliced tomatoes.
 


Repeat adding the 4 layers (1-4) once more. Then add another round of the first 3 layers (1-3) skipping the layer of tomatoes. Finally, add a last layer of bechamel and top with a layer of bread crumbs.
 
 
 
Cook for 35min on 180C. Allow 15min for it to cool down.
