Crêpes

 Makes 25 crepes of 28cm.

Ingredients:
 
  • 500g flour
  • 100g buckwheat flour
  • 5 eggs
  • 50g butter
  • 1200mL milk
  • 1T spiced rhum
 
Method:
 
Melt the butter, whisk in the eggs and rhum. Pour the mixture in a big bowl with the flour and add the milk progressively while stirring (use a spatula to scrape the sides of the bowl). Heat up a lightly greased crepe pan and make the first crepe (which won't be as nice as all the following ones).
