Another recipe from our potager ... Swiss chard is versatile, but something more important is that when you harvest, a couple of weeks later, it's grown back! Abundance, my friends, so take in those vitamins and antioxidants, no calorie counting!

Ingredients:
- Large bunch of Swiss chard
- 1 onion finely chopped
- Some sliced leek or any pepper
- A punnet of mushrooms, sliced
- 1 tin canned tomatoes or 2/3 fresh tomatoes, diced
- 1T tomato paste
- 1t balsamic vinegar
- 1T yummy spice
- Minced garlic
Method:
Prepare the ingredients. In a heavy based saucepan (I used enamelled cast iron) on medium heat, lightly fry the onion and leek in a little vegetable oil. Add the spice, stir to combine then throw in the mushrooms. Stir gently to combine. Cook further for a few minutes then add the remaining ingredients. Allow to simmer for at leat 20/30 minutes on medium low heat, adding a little water if required and stirring from time to time. Mince the garlic and add to the
