Ingredients:
- 200g prunes
- 1 cup chaï black tea
- 1T rum
- 175g sifted flour
- 60g sugar
- 100g butter
- 12cl milk
- 2 eggs
- 1t baking powder
Method:
Soak the prunes overnight or at least 2 to 3 hours in hot spicy chaï tea laced with the rum. Drain.
Preheat the oven to 170°C.
Melt a tablespoon of the butter, and grease the loaf pan with it and sprinkle a little of the sugar over the melted butter. Tightly cover the bottom of the loaf pan with the soaked and drained prunes.
Mix the flour and baking powder with the rest of the sugar, the pinch of salt, the melted butter, the warm milk and the eggs.
Pour the batter over the prunes and bake for 40 minutes or until a skewer comes out clean.
Wait at least 10 minutes before serving wth vanilla ice cream for a warm pudding or serve cold slices for a tea party.
